Our ethos
Living in a way that reflects our values
At High Grange, we believe that good food, fire and hospitality should go hand-in-hand with care — for the land, our community, and future generations.
Working in the Blackdown Hills, an Area of Outstanding Natural Beauty, we aim to be thoughtful custodians of the space we’re lucky enough to call home. From the way we cook and compost, to how we power our buildings and train our team, we’re always working to do better, tread more lightly, and live in a way that reflects our values.

Food and sourcing
Our menus are built around ethical sourcing, seasonal produce and low-impact ingredients. We grow our own vegetables, collect eggs from our small flock of hens, and harvest herbs from the garden outside our kitchen.
We buy fish from day boats working out of Lyme Bay, caught using low-impact netting and eaten within 24 to 48 hours. Our meat comes from responsible local suppliers, including ex-dairy beef from Meat Matters and pasture-raised geese from Kilmington.
We often say we don’t just cook within a 25-mile radius – we cook within 5!
Packaging and plastics
We’re actively working to reduce our use of plastic in every area of the business. By growing more of our own food and shopping from local markets, we avoid unnecessary packaging.
We buy meat in large cuts and whole fish, reducing packaging waste. For our takeaway events, we use reusable containers and are continuously researching the most ethical, compostable and sustainable packaging available.
Fire and fuel
We cook using wood – but we do so with care. Where possible, we use fallen timber from our own land. When we need to source firewood, we buy from local, managed forests that produce kiln-dried wood efficiently and responsibly.
Energy and infrastructure
We use 100% renewable electricity via Octopus Energy and are working toward generating our own power through rooftop solar panels. We also plan to install an electric vehicle (EV) charger for guests as part of our next phase.
On a personal level, we are in the process of transitioning to electric vehicles and continuing to reduce our household footprint alongside the business.

People and community
None of what we do would be possible without our brilliant team. We hire locally, pay above industry standards, and strive to create a supportive, enjoyable place to work. Our team receives regular training on sustainability, food waste and environmental awareness.
We’re also committed to giving back. We've hosted charity events for ARC in Axminster, volunteered for the Lyme Regis Food Bank, and are developing new community projects that bring people together around food, fire and shared learning.
